3 halves boneless and skinless chicken breast (diced)
6 large diced tomatoes
3 cups bread croutons
1 cup biscuit
& frac12 cup chopped basil leaves
3 garlic cloves
5 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
& frac12 teaspoon freshly ground pepper
& frac12 teaspoon salt
Vegetable oil for frying.
Preheat the oven to 200 & ordmC.
To prepare the croutons, cut the bread into cubes that are left to dry for a day or two (if it is already dry, the bread will crumble and cannot be cut).
To prepare the breadcrumbs, leave the bread to dry for a few days, then put it in the oven at 100 & ordmC, for about 1 hour. Break the bread into pieces that are finely chopped into a blender.
Place the bread croutons evenly in a baking tray and spread over the entire surface. 2 tablespoons olive oil and 2 chopped garlic cloves.
